No-Bake Chia Chocolate Chip Oat Bars Recipe

I love these because they are quick to make and easy to take on the go for a protein-packed snack. The protein you choose really changes the taste so try experimenting with a few of your favorites to see which you like best.

 

No-Bake Chia Chocolate Chip Oat Bars


Prep Time: 10 minutes

Serves: 10-12

Ingredients

  • 2 cups GF rolled or quick oats

  • 2-4 scoops protein powder (I use NuZest Smooth Vanilla or Natural, or Sprout Living's Vanilla Lucuma)

  • ½ cup organic coconut oil (melted)

  • ½ cup nut butter of choice (I use smooth raw almond butter)

  • ¼ cup chia seeds

  • ¼ cup pumpkin seeds

  • ¼ cup honey or maple syrup

  • ½ - 1 cup non-dairy chocolate chips (Enjoy Life dark chocolate or Lily’s)

  • Pinch of sea salt

  • Cinnamon and vanilla extract to taste (optional)

Preparation

  • Combine all dry ingredients in a large bowl

  • Melt coconut oil and combine oil and all remaining ingredients with the dry ingredients

  • Once evenly combined, press into a casserole dish lined with parchment paper and place in the refrigerator to chill for 2 or more hours.

  • Once bars have hardened, remove from the dish, cut into squares, and place in a container in the fridge for a quick protein-packed snack throughout the week.
